Peanut Butter Brownie

My husband has a voracious appetite at times, he loves sweet stuff and likes to snack at home when he is not working. I didn't stock up the ingredients as I haven't been baking for quite sometime. But I do have lots of chocolate, 4 blocks of cream cheese (why am I not surprise?) and 2 bottle of peanut butter. Hmm, can't remember what I was planning to do with the peanut butter. Anyway that's how peanut butter brownie came along...

This easy brownie is fudgy, moist in the middle with a chewy outer crust, all with a nutty flavour. The saltyness of the peanut butter compliments the sweetness of the chocolate superbly. Be warn, they are very rich, and moreish.

Recipe: Peanut Butter Brownie
Makes: 16 square

Ingredients:
• 225g crunchy peanut butter
• 200g dark chocolate, broken if using bar (i use 52%)
• 230g soft light brown sugar (add 10-20% more if you have a sweet tooth)
• 3 medium eggs
• 100g self-raising flour


Method:
1. Set aside 50g each of the peanut butter and chocolate. Heat oven to 180C and line a 20cm (9") square baking tin with baking parchment.

2. Gently melt remaining peanut butter, chocolate and sugar in a pan, stirring occasionally, until the sugar has just about melted. Turn off heat and use a wooden spoon to beat in the eggs one by one. Stir in the flour and scrape into the baking tin.

3. Melt reserved peanut butter in the microwave on high for 45secs, or in a pan, until runny, then drizzle over the brownie. Bake for 20-35mins until it has a crust, but the middle still seem slightly uncooked. (i bake 20mins)

4. Melt reserved chocolate, drizzle over the brownie, then cool in the tin before cutting into squares.


They are just divine to eat. You'd never guess these irresistible treats contained no butter! Enjoy and happy sweet Sunday!
