Cooking en papillote is a French cooking method which means "in parchment". It encloses the food in an envelope, employing steaming and braising as the food cooks itself in liquid. Cooking by this method infuses the entire packet with the herbs, wine, and vegetables. The food cooks and steam by itself without drying out. It's also healthier, because the method requires little or no oil.

Apple Pastille Samosa
I learn about this recipe during the Panasonic Cooking Workshop a couple of weeks back. Beside the Farmer Pie, this is another recipe I really like.

Farmer Pie
Cottage pie (beef), shepherd's pie (lamb), farmer pie (chicken) is traditionally made with leftover roast meat, but today it is more often made with fresh minced or rich ground meat/poultry stew topped with fluffy spuds then baked until the top layer is lightly browned. It makes a nice hearty breakfast or brunch.

Baked Carrot Cake using Panasonic Rice Cooker (红萝卜蛋糕)
Honestly, I have never bake a cake using a rice cooker even thou I have heard people doing so. Why? Cause I have a oven at home? I mean, seriously, do you boil your soup in a rice cooker when you have the pot? (well, we did and we shall post the recipe in the next post!)

Pineapple Tarts 黄梨酥
This Chinese New Year delicacy is a MUST have in all household. Other that the delicious buttery crust and sweet pineapple jam, the tarts also hold an auspicious meaning. The pineapple, Ong Lai (旺来) in Hokkien literally means "fortune or prosperity comes". Thus it is believed that pineapple is a lucky fruit that makes one prosperous.

Christmas Spiced Cookies
It's Christmastime! We all love the jolly season, don't we? Lots of food, shopping, gifts and beautiful lighting.
2012 is a blessing year for us. We received tons of small gifts from colleagues and friends, Fendi pouch from my boss, expensive champagne, good whiskey and wine from company, a good company Christmas lunch at a French restaurant and a happy gathering with family. What more can we ask for this Christmas?

Coconut Jam Cookie (椰丝果醬餅乾)
This classic jam cookie gets a twist using desiccated coconut as the base. We also added lemon zest to give a nice citrus flavour. If you love coconut with a hint of lemon, this is your cookie.

Chocolate Mocha Mousse Cake
This is similar to the Luscious Chocolate Mousse Cake that I had made for Father's Day last year. I use a different sponge recipe that is light, less chocolaty and more moist.
Hazel's (Aimakan) birthday is just around the corner, and since we are having a lunch party at Ellena's (Cuisine Paradise) house, I decided to make a birthday cake for her. Haven't been baking a whole cake for a good damn 1-year, I have to admit that my baking skill has turn a tad rusty. Over judging the baking timing, the supposedly moist cake turn out a tad dry, but lucky still soft.

Apple Blueberry Milk Tea Cake
Raise your spirits with the rising sun as we fend off hungry spirits with Apple Blueberry Milk Tea Cake. White milk tea fused with butter and a dribble of apple blueberry jam.
We have received Gold Kili White Coffee and White Milk Tea and some Frezfruta jams from Lion City. At the same time, hubby is crying for something sweet, and with the limited ingredients I had left at home, I thought of making a milk tea cake topped with apple blueberry jam. The nice fragrant tea compliment the sweet apple blueberries.

Peanut Butter Brownie
My husband has a voracious appetite at times, he loves sweet stuff and likes to snack at home when he is not working. I didn't stock up the ingredients as I haven't been baking for quite sometime. But I do have lots of chocolate, 4 blocks of cream cheese (why am I not surprise?) and 2 bottle of peanut butter. Hmm, can't remember what I was planning to do with the peanut butter. Anyway that's how peanut butter brownie came along...
This easy brownie is fudgy, moist in the middle with a chewy outer crust, all with a nutty flavour. The saltyness of the peanut butter compliments the sweetness of the chocolate superbly. Be warn, they are very rich, and moreish.
