Triple chocolate cheesecake
This cheesecake is made of three chocolate layers. Dark chocolate gives it an intense flavour that stays in contrast with subtle milk and white chocolate fillings. I used philadelphia cream cheese (if you can find quark cheese - fresh and soft curd cheese, will be better) and add 3 extra tablespoons of sour cream to the filling because the latter is thicker.

Chocolate is also my all-time favourite special occasion cake. Not only does it wow people presentation-wise, but it’s pretty knock-your-socks-off tasty as well. Unless you’re a chocolate hater, this recipe isn’t for you.

Strawberry Mango Cheesecake

Make this cheesecake for Allan Lee's birthday on Sunday. Make the crust before the World Cup match start. And make the cheese mixure during the half time. It didn't turn out to be as good as make before. Guess I was in a rush and didn't add enough gelatin, as the cheese is very soft and melt very fast. But the decoration was nice thou. ;)

More tips
1. For chocolate flavour, substitute 1 tbsp cocoa powder for the same quanity of flour.
2. For a chunkier texture, use coarsely chopped chocolate instead of chocolate chips.
3. For mocha flavour, use coffee essence instead of vanilla essence.
4. For nutty flavour, add whole or chopped macadamia nut, walnut or hazelnut.
5. For fruity flavour, add chopped dried fruit, such as raisins, sultanas, etc.
